With the new year well and truly started and probably countless resolutions being decided upon, I thought I would bring a quick and easy, guilt free treat that wont upset any goals, but will satisfy cravings for sweets.
There are so many new and ‘trendy’ foods out there and I really felt that 2014 was the year of health foods. I know I tried out quite a few new things in the hopes of making better long term choices and although I wasn’t super successful I definitely discovered a few gems that I really liked, chia seeds were one of these.
Chia seeds are a weird and wonderful ingredient that transform into tapioca like consistency and are said to be an incredible super food. If you are not one for ‘odd’ textures this super food may take a little getting used to, but if you liken in to a jelly like texture you should be fine (I am trying so hard to avoid the word slimy lol). I however, really like the consistency and really enjoy this dessert, whether you need a cooling treat mid day or something to finish a delicious dinner, why not give this go.
1 – This is so simple! Simply add the cocoa powder, vanilla essence (alternatives are maple syrup, agave nectar or any sweetener) and coconut milk and whisk for at least 1-2 mins. Your mixture should whisk into a silky, velvet like liquid and once these ingredients are smooth taste it to see if you require any more sweetness (or cocoa).
2 – Once the liquids are combined add your pinch of salt and chia seeds (shredded coconut also is delicious in this recipe) and once again whisk for a good 2-3 minutes.
3- Pop this delicious concoction into the fringe to chill for a good 2 hours and then serve however you like.
